In 1997, Patrick Guilbaud moved his famous restaurant to The Merrion Hotel. It's the only restaurant in Ireland to be rated with two Michelin stars and has maintained its rating even after its move. The restaurant overlook the Merrion's private gardens, and adorning the walls is original artwork by such artists as Mainie Jellet and Roderick O'Connor. The restaurant strives to produce a classic dining experienced based on the best Irish foods available with favorites such as scallops, duck and foie gras.
